I used to be like most vegans I know and eat at any restaurant that I believed I could get vegan food at. You know, leave the cheese off of this, ask whats in the broth of my vegetable soup, that sort of thing. Lately I've been cooking dishes similar to those I grew up eating. For those of you who don't know me, my Father is a first generation from Mexico and my Mother was adopted and raised by a Mexican family. Thus, the majority of food I grew up eating was at least based off traditional Mexican dishes. I made some wonderful almond milk this morning. I've never made it before and people keep telling me I need to soak the almond over night. But, I woke up this morning and I thought, "soak them over night... hm... I do not have time for that. But we have a VitaMix! Fuck soaking these things over night!" It turned out great. I'm not sure I'd call this a recipe. It's more of a "How-To." It's just so simple. I feel like breakfast is not complete with out some tasty potatoes. You can also throw these in a corn tortilla and have a nice little homemade potato taco or leave the cheeze out and served them with dinner. I'm sitting here thinking about the amazing breakfast I had and I'm kicking myself for not taking a picture before I ate it... I had home made (vegan) waffles with blackberries and white chocolate chips smothered in pure maple syrup. So tasty. Yes it was all vegan and made with organic oat and brown rice flours. I do however, have some other pictures to share today. I'm hoping today will be a better day than yesterday. At least I'll try to keep myself busy and my mind off of everything that bums... Currently I'm getting over a super bad sickness. I'm not sure what it is but I can honestly say I don't remember the last time I have felt so horrible. My symptoms included a headache, nausea, fatigue, cough, stuffy nose, and worst of all, achy knees and lower back. The aching was so bad I haven't been able to sleep much and when I do get close to sleeping I get woken up either by being incredibly cold or incredibly hot. I started this morning off with pizza then rode my bike 12 miles to the Outer Limits in Anaheim. It's been a pretty slow day here so far. I did however read an interesting article about double-gloving in the medical industry, more specifically during surgery.
